Here is how it is defined scientifically

Sun set, or sundown, is defined as that moment at dusk when the upper rim of the sun’s disc disappears below the plane of the horizon as well as the accompanying atmospheric effects as a result of the rotation of the Earth.

Why are sunsets so beautiful?

Here’s the science behind the beauty of sunsets and the reason why the sky usually explodes into a splendid mixture of reds, orange, and yellows as the sun goes down.

The light that travels from the sun is made up of a spectrum of colours, with differing wavelengths. Red, orange, and yellow have long wavelengths while green, blue, indigo, and violet comprise of shorter wavelengths. As these light waves enter the Earth’s atmosphere they encounter tiny particles and molecules in the air. This collision causes some of the light’s wavelengths to change direction and scatter. This phenomenon is referred to as Rayleigh scattering.

At dusk, as the sun slowly approaches the horizon and is low in the sky, its light has to travel and pass through a higher concentration of the atmosphere. Because of this the colors with shorter wavelengths are scattered so much by the atmosphere that it is no longer visible. The long wavelength colors are less affected by the molecules in the air and thus remain, transforming the sky into a kaleidoscope of vivid colors.

Even though it may appear as if the clouds are changing color during sunset, it is actually the reflecting of the unscathed and longer-wavelength rays of light as the sun sets that creates this effect.
